A very Spanish Recipe: Castellana Soup
This is one of the soup recipes more associated with Spain, perfect after a hard day braving the cold winter, but also very consumed by farm workers, such as brunch or even breakfast! The recipe has many variations, this is one of them.
Ingredients for four people:
• 2 Loaves of sliced bread (two day old bread)
• 2 Liters of ham broth
• Olive oil
• 2 Eggs
• 5 Garlic cloves
• Paprika
• Salt
Warm five tablespoons of olive oil in a pot. Peel the garlic cloves and add to the oil.
Keep on heat medium and cook until the garlic changes to a light brown. Remove the cloves and lower the heat, then add two tablespoons of paprika (be careful not to burn it).
Place the sliced bread in the pot and stir the mix a few minutes. When the bread is crunchy, add the ham broth and raise the heat to hight. Add salt if necessary.
Keep the soup bouling for five minutes, mix two eggs in a little bowl (not too much) and add to the soup while stiring. Wait twenty minutes before serving.
